Sizzling Summer Cocktails!

Cool down with a jug of one of our easy sizzling summer cocktails. Try a fruity daiquiri, refreshing mojito or a classic long drink made with Pimms.

Strawberry Daiquiri by Andy Pearson

The sweetness of strawberries and the kick of lime make this classic daiquiri a real crowd-pleaser of Summer Cocktails.

Ingredients

4 fresh strawberries, plus ½ strawberry to garnish

2 tsp white sugar

35ml/1½fl oz white rum

1 tbsp strawberry liqueur

25ml/1fl oz lime juice

Method

Place the strawberries, sugar, rum, strawberry liqueur and lime juice into the base of a cocktail shaker and mash (muddle) with the end of a clean rolling pin.

Place the lid onto the cocktail shaker and shake well.

Strain the mixture into a Martini glass and garnish with half a strawberry.

Mojito by Andy Pearson

Irresistibly fresh and punchy, this authentic mojito cocktail recipe is a one-way salsa dance to the Caribbean.

Ingredients

1½ limes, cut into wedges

20 fresh mint leaves

2½ tsp granulated sugar

handful of ice

65ml/2½fl oz white rum

splash soda water, to taste

fresh mint sprig, to garnish

Method

Place the limes, mint and sugar into a sturdy highball glass and ‘muddle’ or mash with the end of a clean rolling pin, to bruise the mint and release the lime juice.

Add the ice and pour over the rum.

Add soda water to taste and stir well. Garnish with a mint sprig and serve.

Pimms Punch by Andy Pearson

This Pimms recipe has an extra kick from the fruity cider – perfect for summer barbecues or picnics.

Ingredients

dry cider

3 handfuls mixed fruit pieces (such as orange, lemon, lime, strawberries)

250ml/9fl oz Pimms

Method

Pour the cider into a large jug or punch bowl

Add a couple of straws and the mixed fresh fruit pieces, then gently pour the Pimms on top of the cider to create a separate layer.

Long Island iced tea by Wayne Collins

This classic cocktail certainly packs a punch! It includes vodka, gin, rum and orange liqueur.

Ingredients

15ml of each of the following:

Vodka, Gin, Light Rum, Orange Liqueur, Lemon Juice & Freshly Squeezed Orange Juice.

1 tsp sugar syrup

Cola, to top up

Lemon wedge, to garnish

Method

Place all of the ingredients into a cocktail shaker with a handful of ice and shake hard.

Strain the cocktail into a highball glass, top up with cola and garnish with a lemon wedge.

Margarita by Andy Pearson

This classic cocktail is the taste of summer!

Ingredients

35ml/1¼fl oz tequila

20ml/¾fl oz orange liqueur, such as Cointreau

35ml/1¼fl oz fresh lime juice

a handful of ice cubes

lime wedge, to garnish

Method

Pour the Tequila, orange liqueur and lime juice into a cocktail shaker.

Add a handful of ice cubes and shake vigorously for 10-15 seconds.

Strain into a martini glass with half the rim damped with water, then dipped in salt.

Add a lime wedge on the rim by way of garnish.
