                                      ROAST CHICKEN AND HAM HOCK PIE
A Classic Winter Warmer

As the cold weather is upon us so abruptly as to forget the past heat wave of the fabulous Summer just gone I look forward to planning and creating some warming hearty dishes for my menus over the next few months and throughout the winter period.
BRADLEY’S BAKERY
 1kg skinless/boneless chicken thigh meat
1 small ham hock
1 pack of puff pastry
2 onions
1 carrot roughly chopped 2 cloves of garlic
3 sprigs of thyme
4 sage leaves
2 bay leaves
10 black pepper corns 400ml of chicken stock 300g chestnut mushrooms 200ml double cream
200g butter
200g plain flflour
1 star anise
3 whole cloves
Method
1) Firstly you want to wash the ham hock under a cold running tap to wash away some of the excess brine and then leave for 2 hours in cold water changing the water every 30 minutes this will reduce some of salt content in the hock but different meats will vary.
2) After the 2 hour period place the ham into a large casserole dish or pan cover with fresh cold water.Add the star anise, cloves, 1 onion and the carrot and 1 bay leaf and the pepper corns I wouldn’t add any salt to the ham at this stage of cooking.
3) Cover with a tight fifitting lid and place into a pre heated oven at 160 degrees and cook until the bone falls freely when given a gently tug this can take anything from 2 to 3 hours depending again on the size of the hock. Once the meat is cooked and
cooled slightly remove any fat, skin and bones and break the soft pink meat into large chunks.This can be done the day before to save time and don’t throw away the stock as it can be used to make a great soup
4) Next step is to dice the remaining onion and crush the garlic start to soften them in a large frying pan before adding the chicken thigh meat which can be seasoned with a crunch of sea salt and a twist or two of black pepper
5) Now strip the delicate leaves from the thyme and add to the chicken along with the remaining bay leaf and turn up the heat
Start adding the chicken stock slowly 100ml at a time so as to allow it to reduce and intensify
6) Once all the stock is reduced then add the cream and bring to a gentle boil. Mix together the butter and flflour to make a soft paste and then add this to the hot chicken cream the sauce will be thick and silky in texture by now so place to one side to cool
7) Quarter cut the mushrooms and fry gently in a separate pan before seasoning and adding to the chicken and then fifinally add the pre cooked ham hock till you visually decide that there is a equal balance of chicken to ham.
8) Transfer the mix into a suitable pie dish with relatively deep sides and chop the sage leaves over the fifilling before covering with a lid of puff pastry.Wash with a beaten egg yolk and bake in a pre heated oven 180 degrees for about 35 to 40 minutes till the crust is golden
9) Make sure the fifilling is piping hot before serving I would Recomend a large dollop of creamy mashed potatoes and some curly kale.
